The smell of fresh Concord grapes is as intoxicating as an orchard of fragrant blossoms. The flavor of Concord grapes is crisp and clean with a balanced sweetness. Fresh Concord grapes are a world apart from their canned, jellied, and jarred counterparts. The processed grapes are cloyingly sweet with none of the brightness of the fresh ones. This Concord Grape Glaze is an aigre doux (sweet and sour) sauce with aromatic attitude. Sweet, sour, and so fragrant, it is sure to become a family favorite. The sauce nicely complements the flavor of turkey and is amazing on duck and chicken. It can be made up to 2 days before serving.
