You can make these baked polenta fries either with your own homemade polenta (my preference) or with one of those prepared tubes you can find at most Supermarkets these days. Here I give you the recipe to make it from your polenta so that you can add any flavorings you like to the mix before it firms up. Herbs and Parmesan cheese are really good, pesto is wonderful too. They make great finger food for an anytime snack or a party. Serve with a homemade ketchup or any other dipping sauce of choice.
