Sufganiyot – Whole Wheat Jelly Doughnuts
Sufganiot (Jelly Doughnuts)

Uber-easy jelly-filled sufganiot (doughnuts) are ideal for Chanukah or anytime you get a craving. My sister-in-law Carly and I attempted this recipe one Chanukah night when the whole family came over for candle-lighting. Everyone got involved. Some of us were on deep-fry duty, some of us powdered and the rest "quality control" tasted. We all had a blast. There was flour and confectioners' sugar everywhere.

I like to make these small donuts for Chanukah. These are made with choux pastry, the kind you use to make cream puffs, gougeres and profiteroles, only instead of baking the dough as I do for those pastries, I fry it in small blobs. Choux doughnuts go down easy, take minutes to make and don’t require waiting for yeast dough to rise or rolling out dough or anything involved like that. We like plain doughnut holes. I add a hint of refreshing lemon peel to the dough and a coating of cinnamon-sugar or confectioners sugar on the crust. But you can add raisins, cranberries, chopped nuts and such to the dough if you wish.

I love food that fakes you out, when my husband came home and I asked him to taste one of these donuts with dinner, he said, isn't that dessert? Once he got over the confusion, he tasted it and loved it, although he suggested it would be better for a brunch and I agree, it has a bagel with cream cheese flavor, but a different texture and much more fun for a party.

This same recipe makes great apple fritters. Peel, core, and slice three apples into 1⁄4-inch rings. Lightly coat in flour, shaking off excess. Prepare batter as directed. Dip the apple rings into the batter, shake off excess, and fry. Sprinkle with confectioner’s sugar and cinnamon.
