Healthy Recipes for the High Holidays

This is my take on a an Asian chow fun. Typically made with rice noodles, I used Manischewitz Extra Wide Whole Grain Noodles and it worked perfectly. You can use any of your favorite vegetables and/or add chicken, tofu or beef. I love the hearty wild mushrooms and could eat this as a vegetarian main or side dish.

Kale Salad with Sichuan Peppercorn Dressing

I love serving salads of all different sizes, shapes and textures during the holidays. Easy to prep in advance and guilt-free, so go ahead and take seconds, maybe even thirds! Sichuan peppercorns have only recently become available in the US, but they are now easy to find even on Amazon. They have a very unique citrusy flavor that numbs the tongue and keeps you coming back for more. If you don’t have any you can leave it out, but a lot of the flavor will be missing.

"Aside from the heart healthy benefits of canola oil, I love using it in a marinade because of its mild, almost neutral flavor. Canola oil allows the flavors of the lime, garlic and soy sauce to come through in this recipe. The mild taste of canola oil makes it great in a salad dressing too, when you want to taste the ingredients and not the oil."

This is a real crowd pleaser and is so quick and easy to make. The sesame teriyaki sauce adds a lot of flavor to the meat and tenderizes it, leaving the meat moist and mouthwatering even after being baked.
