When thinking about this recipe I wanted to try and find a way to combine Gold’s Ketchup with horseradish with a burger in a different way. I found out that in Lexington, NC they make a slaw with a spicy ketchup and I knew what I wanted to do. I like that the slaw has no mayo and can be kept pretty low calorie, it also doubles as a burger topping and condiment in one. You really don’t need anything else to top your burger. I happen to have ground veal, but any ground meat will work.

I now share my new absolute all-time favorite coleslaw recipe. I will never buy coleslaw again (unless of course I don’t have time to make this!). Variation: Don’t have tofu cream cheese on hand, or don’t care for it? Use tofu sour cream instead. Although if you don’t care for the pareve cream cheese I am guessing the sour cream is off your list too. Easy enough, just use 2/3 cup mayo and call it a day. Also try adding half a red onion thinly sliced for a slight bite.

Father’s Day is coming up. I look forward to hosting a backyard barbecue for my dad on a sunny, cloudless day. Hubby is grilling. I sit poolside, sipping a pina colada as the kids splash around. After the party’s over, I’ll lounge a while with a novel.
