Zucchini Souffle (Kugel)

Low Carb and rich!


  • Cook Time : 50-60minutes min
  • Ready Time : 50 min


8-10 Servings


  • 8 large zucchini squash (can use 6 mdm yellow and 6 mdm green squash)
  • 1 package fresh mushrooms
  • 2 large onions
  • 2 tablespoons mayonnaise
  • 6 egg whites
  • 2 tablespoons onion soup mix


1. Scrub zucchini and cut into strips (DO NOT PEEL!) After they are nice and soft, let them drain in a colander or strainer. – make sure they drain well!
2. Slice mushrooms and onions and saute. If using soup mix, add 1/2 here so the onions caramelize better.
3. after the zucchini has cooled mash it over the colander, so all liquid drains out, but make sure colander wholes aren’t too big!
4. Mix with all other ingredients.
5. Bake in preheated oven at 350* for 50-1 hour until top springs back when touched.

    How many cups or pounds of zucchini?

    The zucchini is cooked, correct? Does it matter how you slice it, since it will be mashed later? Why must it NOT be peeled?
