Zucchini Pizzas

These are the perfect alternative to mini pizza bagels. About the same size and gorgeous for a cocktail party or fun for an afternoon snack.


  • Ready Time : 0 min


2, 4-5 each


  • 1 large zucchini
  • Fresh or dried oregano
  • freshly ground black pepper
  • ¼ cup tomato sauce
  • ¼ cup mozzarella cheese


Slice zucchini.  Spray with cooking spray, sprinkle with pepper and oregano.  Broil 10 minutes until golden.  Top with ½ tablespoon tomato sauce and 1 teaspoon pizza cheese.  Broil 2-3 minutes.

    If you were making a large amount for a party could you broil them ahead of time and then reheat, or would they get soggy?

  2. what a great idea! I have some pretty patty pan squash and these would work perfect for these squash pizzas and they would be so adorable

    made these last night. broiled for 25 minutes & still not golden, but they were basically cooked enough. maybe it’s my oven, but it’s hard to imagine how 10 minutes would be enough. otherwise, love the recipe. thanks for the idea!
