Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon ground cinnamon
- 3 eggs
- 1 cup vegetable oil
- 2 cups white sugar
- 1 tablespoon vanilla extract
- 3 cups grated zucchini
- 1 cup chopped walnuts
Directions
Grease and flour 2- 8×4 inch loaf pans. Preheat oven to 325.
Sift flours, salt, baking soda, baking powder and cinnamon in a large mixing bowl.
Beat eggs, oil, sugar and vanilla in a separate bowl. Add dry ingredients to wet and stir gently until combined. Add zucchini and nuts and stir again.
Pour batter into prepared pans and bake for 40-60 minutes until toothpick inserted comes out clean.
Cool for 20 minutes.
