Zesty Lemon, Tomato, and Onion Tilapia

Ingredients

  • 4 Tilapia Fillets (6-8 oz)
  • 1 Medium Tomato
  • 1 Medium onion
  • 1 lemon
  • 4 TBS Olive oil
  • Salt and Pepper (to taste)

Directions

Preparation

1 Preheat oven to 375 degrees F
2 Chop the onion, tomato, and lemon into thin slices
3 Coat both sides of each fillet with olive oil
4 Place fillets in a glass pan
5 Sprinkle with salt and pepper
6 Lay slices of onion, tomato, and lemon to cover the top side of each fillet
7 Bake for 8 to 12 minutes

    I love this recipe. Of course, I do make some changes, but it’s window dressing.

    I love lemon, so instead of putting slices of it on the fish, I squeeze it on the fish and then add the spices (I add dried herbs too) and the vegetables.

    I don’t have a glass pan, so that’s at least partly why I find the cooking time to take much longer than stated.

    I love how flexible it is. I’m not a big fan of serving fresh fish cold, but this works. It works for Shabbos, but I’ve also made it to bring to work for lunches. Thanks!
