yellow cous cous soup

this is my standard soup for cous cous, i start it once the cous cous is on its first cook. serve it over cous cous friday afternoon lunch classic. with or without chicken it is great!

Ingredients

  • 1 large onion
  • 6 carrots
  • 1/2 cabbage
  • 3 small squash (zuchinni, summer)
  • 1 can of ready to eat chickpeas
  • 4 chicken thighs and legs (optional)
  • 3 heaping tablspoons chicken soup powder mix
  • 1 large tablespoon tumeric
  • Salt and pepper
  • drizzle of oil
  • 4 celery satlks

Preparation

Preparation

1 in a large soup pot heat on med heat the oil, add chopped onion, celery and peeled chopped carrots, let cook until the onions are clear.

2 add squash and cabbage (chopped large) and chick peas.

3 add 4-6 liters of boiling water, stir

4 add chicken soup powder mix and tumeric go easy on the salt b/c the chicken powder is salty and add pepper.

5 bring to a boil on high heat then let simmer for at least an hour or so.
