Wholegrain Chocolate Banana Bread

This is a healthy recipe that can be used for breakfast, dessert or snack and is so good for all ages. It can be made in any shape too, loaf pan, cake pan or even muffins.

Ingredients

  • 1 1/3 cup whole wheat flour
  • 1/2-3/4 cup Sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 cup multigrain hot cereal mix
  • 1/2 cup chopped nuts and 1/2 cup chocolate chips
  • 1 cup mashed ripe bananas (about 2 large)
  • 1/2 cup soymilk
  • 2 Eggs
  • 1 tbsp. lemon juice

Preparation

1 Combine dry ingredients in large bowl.
2 Measure remaining ingredients in small bowl, mixing with a fork. Pour into dry ingredients.
3 Stir until just blended.
4 Bake in well greased pan, loaf pan or cake pan for 50 minutes at 350 degrees F.
5 Cool on wire rack.
