Whipped Ricotta and Fig mini-pizzas

Ingredients
- frozen mini-pizza doughs (mazour brand)
- 1 package mission figs, chopped coarsely
- 1 cup part skim ricotta cheese
- 1/2 cup grape tomatoes, sliced in half
Directions
Preparation
1 preheat oven to 400 degrees
2 in a bowl whip the ricotta with a whisk until light and fluffy
3 place tomatoes on a greased cookie sheet, and roast in the oven for 10 minutes, until tomatoes are wilted and the juice easily flows out of the slices
4 place mini-pizza doughs on cookie sheet or pizza stone and place in oven for 3-4 minutes until doughs puff up
5 remove doughs from oven and top with ricotta, 1 tomato and 2-3 figs
6 place in oven and cook for 6-7 minutes
7 serve hot
