Wheat Bran Cranberry Quickbread

Ingredients

  • 1/2 cup unbleached white flour
  • 1 cup whole wheat flour
  • 1 cup wheat bran
  • 3/4 cup brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1/2 cup walnut pieces
  • 1 cup cranberries
  • 1 egg
  • 1/2 cup milk
  • 1 cup Orange juice
  • 1/3 Cup Oil

Directions

Preparation

1 Preheat oven to 350°F.
2 n a large bowl, mix together the egg, milk, orange juice and oil. In a separate bowl, combine flours, bran, sugar, baking powder, baking soda, salt, walnuts and cr
3 Pour into a greased 9x5x3” loaf pan. Bake for 55-60 minutes, or until the bread is firm in the center. Cool in pan 10 minutes, remove to rack and cool before slicing.
