Kids Bento Box Veggie Skewers

Everything is better when it's on a stick.  Pack 'em up with our fabulous dressing, sliced fruit, thawed edamame, pita triangles, hard-boiled egg, juice box or milk like this bento box lunch.

Veggie Skewers Bento

Ingredients

Vegetables

  • Cucumbers
  • Zucchini
  • Grape tomatoes
  • Peppers
  • Sugar snap peas, cut into 1½-inch pieces
  • Extra virgin olive oil
  • Kosher salt
  • Freshly ground black pepper

Green Goddess Dipping Sauce

  • ½ cup mayonnaise
  • 1 ripe avocado, pitted and lightly mashed
  • 2 teaspoons fresh lime juice
  • 2 scallions
  • Several sprigs of fresh parsley
  • Kosher salt
  • Freshly ground black pepper

Preparation

Vegetables:

1. Toss vegetables in evoo and season with salt and pepper.

2. Thread vegetables onto skewers.

Green Goddess Dipping Sauce:

1. Pulse mayonnaise, avocado, lime juice, scallions, and parsley in a food processor. Season with salt and pepper.
