Vegetarian Split Pea Soup
A hearty meal for a cold winter's day.

Servings
Ingredients
- 2 TB oil
- 2 onions, in chunks
- 2 carrots, in chunks
- 500 gr split peas
- 1 small bulb of fennel, in chunks
- 9 cups (1800 cc) water
- 2 bay leaves
- 2 TB (vegetarian) chicken soup powder
- pinch of black pepper
- pinch of ginger powder
- Salt to taste
Directions
Preparation
2 Saute the onions in the oil until translucent.
3 Add the rest of the ingredients.
4 Close the lid, put on high until it boils, turn low.
5 Let simmer until the peas are soft, 30 minutes at the very least.
6 Taste the soup. If needed, add some more salt.
7 Remove bay leaves.
8 With an immersion blender, blend until it becomes a thick green mass.
9 Enjoy!
