Vegetarian Eggrolls

Ingredients

  • 1 pkg eggroll wrappers
  • 1/2 large onion, diced
  • 1/2 large red pepper, diced
  • 2 large carrots, diced
  • 1 cup rice
  • 2 cups Water
  • 3 tbsp. teriyaki sauce
  • 1-2 tsp. soy sauce
  • 1-2 tbsp. Badia Complete Seasoning
  • 1/4 Cup Oil
  • 1/2 pkg Morningstar Farms Crumblers (or whatever other soy product you like. tofu works just as well!)

1 In large pot, saute onions, red pepper and carrots in oil about 5-7
2 min. Add rice, water, teriyaki sauce, soy sauce and Badia complete
3 seasoning. Cook on low until rice is tender, stirring occasionally.
4 Taste and add any additional seasonings as needed. Follow
5 instructions on eggroll wrapper packaging to fill egg rolls. Bake in 400
6 degree oven for 15 minutes in lightly sprayed dish, flip and bake
7 another 10-15 minutes until browned sufficiently. Enjoy!
