Vegetable Latkes
This is a lightened up latke that can be eaten without guilt!

Servings
Ingredients
- 1 cup onion, chopped
- 2 piece clove garlic, minced
- 1/4 cup red pepper, diced
- 1/4 cup yellow pepper, diced
- 1 1/2 cups carrots, grated
- 1/4 cup celery, chopped
- 10 ounce package spinach, choppped
- 3 tablespoons olive oil
- 3 whole eggs, beaten
- 1/8 teaspoon black pepper
- 1 1/2 teaspoons sea salt
- 3/4 cup whole wheat matzo meal can substitute ground rye crackers or ground oats
Directions
Sauté onion, garlic, red and green peppers, carrots and celery for 10 minutes. Cook and drain spinach (or broccoli). Combine all vegetables. Add eggs and seasonings and mix well. Add matzo meal and combine well. Refrigerate for 15 minutes. Form mixture into patties and fry in non stick pan sprayed with non stick spray until browned on each side.
