Twice Baked Potato Skins

Twice baked potato skins make a cheesy crispy appetizer that can be adapted to any taste. Feel free to add any vegetable such as broccoli, mushrooms or peppers and use any cheese you like. This is fun to eat and will please almost any eater.


  • Prep Time : 15 min
  • Cook Time : 45 min
  • Ready Time : 1 hour




  • 8 medium sized red potatoes
  • 1 cup shredded cheddar cheese
  • 1 head of broccoli chopped into small florets
  • 4 scallions finely chopped
  • ¾ cup sour cream


1 Bake the potato at 375 for thirty minutes until fork tender and slice it in half.
2 Spoon out most of potatoes (reserve for mashed potatoes).  Fill each half of the potato with broccoli, cheddar cheese and
3 Bake in the oven at 375 for fifteen minutes. Top with a spoonful of sour cream.
