An appetizer for dinner or a meal for lunch (think soup and sandwhich), turkey soup is reminiscent of but slightly different than chicken soup.

Ingredients

  • 1/2 pound ground turkey
  • 3 cups water
  • 1 cup tomato juice
  • 1/4 cup shredded carrots
  • 1/2 cup chopped red pepper
  • 1 cup diced potatoes
  • 1/4 cup chopped celery
  • 2 tablespoons uncooked rice
  • 1 medium onion, chopped
  • 1 teaspoon salt

Preparation

1. Brown turkey in skillet, chopping into bite size pieces as it browns. 

2. Drain turkey and add to 3 cups boiling water in sauce pan.

4. Add remaining ingredients and simmer for approximately 30 minutes or until the vegetables are tender.
