Tamarind is a pod-like fruit found in Africa, Asia, and the Middle East. Look for tamarind concentrate in stores that sell Indian or Middle Eastern ingredients.

- 400 g tamarind concentrate
- 500 g sugar4 cups water
Mix all the ingredients in a medium pot and bring just to a boil over high heat. Remove from the heat and set aside to cool.
