Sweet N Sour Meatballs

This is a healthy alternative for the kids (and adults too), providing protein, veggies, carbs and great taste. And best of all it's filling, decreasing junk food urges.

Ingredients

  • one pint mushrooms
  • one large onion
  • 2 medium carrots
  • 2 medium parsnips
  • 2 piece celery stalks
  • one third bunch dill
  • one medium green pepper
  • one quarter cup squeezed lime
  • one quarter cup raw unprocessed sugar
  • one can Safeway 25% lower sodium tomato soup
  • one pound ground dark turkey
  • one medium egg
  • one quarter cup oats
  • one box pasta of choice

Preparation

Chop up onion. Peel and cut carrots, parsnips and mushrooms into small pieces. Cut celery stalks into small pieces as well as green pepper. Chop up dill. Pour tomato soup and water into pot and add above ingredients. Add lime juice and sugar. Stir and cook. While waiting for the above to boil, prepare meat. Add egg and oats to ground turkey and make between 20-40 meatballs, depending on size preference. Add meatballs when sauce boils. Stir and reduce heat. Cook for one hour, periodically stirring. Make pasta in separate pot about 15 minutes before meatballs are ready.
