Ingredients
- 1 pound lean ground beef
- .75 cup celery minced
- .25 cup almonds chopped
- 1 garlic clove peeled and minced
- 1 teaspoon salt
- .25 cup soft bread crumbs
- 1 teaspoon soy sauce
- 2 large eggs slightly beaten
- .5 teaspoon pepper
- vegetable oil
- 1 cup chicken stock
- .5 cup sugar
- 3 tablespoons cornstarch
- .5 cup pineapple juice reserved from pineapple chunks
- .5 cup vinegar
- 2 tablespoons soy sauce
- 1 green bell pepper seeded and chopped
- 8 ounce can of pineapple chunks
Directions
In a large bowl, thoroughly mix the ground beef, celery, almonds, garlic, salt, bread crumbs, soy sauce, eggs, and pepper. Form into small meatballs. Brown meatballs in oil. Drain cooked meatballs on a paper towel.
In a saucepan, add chicken stock, sugar, cornstarch, pineapple juice, vinegar, and soy sauce. Over medium heat, stir for 3 minutes or until thickened. Add green pepper, pineapple chunks, and meatballs. Simmer for 15 minutes.
