Suri’s Special Eggplant Parmesan

Ingredients
- 2 eggplants
- 1 cup flour
- 1 teaspoon garlic powder
- 2 eggs
- 1 crushed garlic clove
- 1 cup cornflake crumbs
- 1 teaspoon Italian herbs
- 1/2 teaspoon dried minced garlic
- 1 onion
- 1 can tomato sauce (15-ounce)
- 1/2 can water
- 2 tablespoons sugar
- 1 teaspoon oregano
- 1 teaspoon Italian herbs
- 1 cup cheese
Directions
- Slice eggplants into rounds and sweat them for 1 hour.
- Combine flour and garlic powder, and dredge the eggplant in the mixture.
- Whisk together eggs and crushed garlic.
- In another bowl, combine cornflake crumbs, Italian herbs, and dried minced garlic.
- Dip the dredged eggplant in the cornflake crumbs, then egg, then cornflake crumbs again. Pan fry until golden.
- Slice onion into thin rings. Place into the bottom of a 9 x 13 pan.
- Top with tomato sauce, and water. Add sugar, oregano, Italian herbs.
- Press eggplant into sauce so that they are covered.
- Top with cheese and press down, so sauce gets on top of cheese as well.
- Bake covered for 1 hour at 350°F or until cheese is melted and bubbly.
