Sun-Dried Tomato Caesar Salad
A sun-dried tomato Caesar salad that can easily work as dairy or parve. Using this recipe at a dairy meal allows for the addition of fresh grated parmesan, a traditional ingredient in Caesar salad. And don't underestimate the power of homemade Herb Seasoned Croutons, the ideal complement to Caesar salad.

Ingredients
- 2 romaine hearts, shredded about 1/4-inch thick
- 1/2 cup croutons
- 1/2 cup sun-dried tomatoes in oil, chopped grape tomatoes, halved (optional)
- Grape tomatoes, halved :(optional)
- For dressing
- 1/4 cup light mayonnaise
- 1/4 cup olive oil
- 3/4 tablespoon Dijon-style mustard
- 1 tablespoon Worcestershire sauce
- 3 cubes frozen crushed garlic, (or 3 cloves fresh garlic, minced)
- 1 tablespoon dried parsley (or 2 tablespoons fresh minced parsley)
- 1 tablespoon onion powder
- 2 tablespoons water
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon kosher salt
- 1/2 teaspoon coarse black pepper
Directions
Preparation
- Place romaine in a large salad bowl.
- Add croutons and sun-dried tomatoes.
- In a separate bowl, whisk together dressing ingredients until smooth and creamy.
- Pour over salad and toss lightly.
- Serve immediately with grape tomatoes, if desired.
Tips
Using Worcestershire sauce in a kosher kitchen can be tricky, because it contains anchovies. Check the kosher certification mark. When it is accompanied by a “fish” notation, it means that the level of anchovies is greater than 1.6% of the whole product. When the kosher certification mark stands alone, the percentage of anchovies is less than 1.6%. when using Worcestershire sauce with meat dishes, use a brand with a stand-alone kosher certification.

As a kosher vegan, I have found a number of recipes for vegan Worcestershire sauce. It’s easy to make with kosher ingredients. In a pinch, I’ve also found that
kosher Ponzu sauce makes an adequate substitute for many purposes. It would probably help to add bit of tamarind paste (tamarind is an important ingredient in Worcestershire sauce) or even a drop or two of pomegranate molasses (similar in being tart/sweet).
I’m looking forward to making this salad with my vegan Worcestershire sauce. I love sun dried tomatoes. Thanks for the recipe!
