Spinach Souffle

Ingredients

  • 1-10 oz:package frozen chopped spinach
  • 2 tablespoon:olive oil
  • 1 cup:sliced fresh mushrooms
  • 1/2 cup:chopped onion
  • 1/2 cup:chopped red pepper
  • 6 large:eggs
  • 1/4 teaspoon:ground white pepper
  • 1/4 teaspoon:nutmeg
  • 1/4 teaspoon:salt
  • 1 lb.:Muenster cheese, grated

Directions

Preparation

  1. Preheat oven to 350. Grease a 9X13 baking dish.
  2. In large skillet, heat oil and add the mushrooms, onions, red pepper, spinach, and seasonings.
  3. Cook until the vegetables are soft then drain them in paper towel lined colander. In a large bowl whisk the eggs.
  4. Stir in thespinach mixture and then pour the mixture into the prepared pan and bake 25 to 30 minutes or until lightly browned.
  5. Cool for 10 minutes, cut into squares and serve.
  6. Serves 6 to 10 depending on how small or large you cut it.
