Spiced Lentils with Mint and Cilantro
I love french lentils and they were beuatifully in this dish.

Servings
Ingredients
- 1 teaspoon freshly ground coriander
- 1 teaspoon freshly ground cumin
- 1 teaspoon freshly ground cinnamon
- 1 small handful of fresh mint
- 1 small handful of fresh cilantro
- 2 cups french lentils
- 5 tablespoons olive oil
- Salt and pepper to taste
Directions
Preparation
1 Put the coriander, cumin and cinnamon in a little bowl. luck a few of the mint and cilantro leaves, and nextle them into the spices.
2 Soak the lentils in water for 30 minutes. Then steam them for 40 to 50 minutes, until cooked but not mushy. (you can boil for 15 to 20 minutes if you don”t have a steamer)
3 Put the lentils in a bowl and toss with the olive oil and salt. Sprinkle the spices over top and stir. Season with salt to taste. Chop the remaining mint and cilantro and sprinkle over top.
