Spiced Corn Fritters

These fritters are made with a bag of frozen corn. (Shh. Don’t tell anyone.) And they’re super easy to make.


  • Ready Time : 0 min



  • 1 1-lb bag frozen corn kernels, defrosted
  • 3 eggs
  • 1 small package whole wheat matzah ball mix (see note)
  • 1 teaspoon salt
  • 1/2-1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • pinch coriander
  • olive oil or spray oil, for frying


Heat a frying pan over medium flame.

Combine all ingredients in a mixing bowl. Stir well to combine.

Pour a small amount of olive oil into the pan (or spray it well with Pam.) Form small patties with and place on the hot oil. Fry for a couple of minutes on each side, until golden brown.

Remove from pan and serve hot.



Note: I used packaged Whole Wheat Matzah Ball mix in these. If you can’t get that, substitute 1/2 cup matzah meal or bread crumbs and a teaspoon of baking powder.

  1. Can I use a 3 ounce pkg of regular matzo ball mix for this recipe? Or is it just one envelope of the mix?
