Spanish Latkes ala Patatas Brava
These spicy potato latkes can be cooled off by a garlic aioli or Romesco dipping sauce.

Ingredients
- 8 potatoes, peeled and shredded
- 1/4 cup flour
- 1/2 teaspoon baking powder
- 3 Eggs
- Salt and black pepper to taste
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne
- oil
Directions
- Mix together the potatoes, flour, baking powder, eggs and spices in a large bowl.
- Heat the oil in a skillet over medium heat. Drop two tablespoons of mixture into hot oil at and cook until browned, then flip and finish cooking. Remove to paper-towels. Serve with Romesco Sauce or Garlic Aioli.
