S’more Cookies

Ingredients

  • 1 cup (2 sticks) butter or margarine, softened
  • 1/4 cup honey
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 teaspoons cinnamon
  • 1 1/2 cups flour
  • 1 1/2 cups graham flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1/2 teaspoon salt
  • 2 cups milk chocolate chunks or chips (or, substitute pareve chocolate chips)
  • 2 cups miniature marshmallows

Preparation

1 Preheat oven to 350˚F.  Cream sugars, honey, and butter until smooth.
2 Beat in eggs one at a time, until well combined, scraping down sides of bowl if necessary, and add vanilla.
3 Mix in the cinnamon, flour and graham flour.
4 Dissolve baking soda into water, and add it to the dough along with the salt, and mix well to combine.
5 Stir in chocolate and marshmallows and, using an ice cream scoop or measuring cup, drop cookie dough onto a parchment-lined cookie sheet in scant 1/4 cup balls.
6 Bake about 12 minutes, or until edges are browned and a little crisp. Centers will remain soft.
