Smoked Salmon Tartare Rounds with Lemon Mayonnaise

Ingredients
- 8 ounce smoked salmon
- 2 tablespoons finely chopped red onion
- 1 1/2 tablespoons chopped fresh dill
- 2 teaspoons olive oil
- 3 tablespoons mayonnaise
- 1 1/2 teaspoons finely grated fresh lemon peel
- 1-2 teaspoon lemon juice
- cucumber or zucchini slices
Directions
Place the salmon on a chopping board and cut into shreds, then turn the shreds and chop them into dice. Add the red onion and fresh dill and continue to chop until the ingredients are finely minced and evenly distributed. Add the olive oil, mix it in and set the salmon aside. In a small bowl, combine the mayonnaise, lemon peel and lemon juice. Serve the chopped salmon on top of slices of cucumber or zucchini. Garnish with tiny dollops of lemon-mayonnaise.
