Smashed Potatoes with Chives
Perfect for Pesach or anytime. If using olive oil this is pareve. Schmaltz makes this fleish (may use pareve milk and margarine when not for Pesach)

Ingredients
- 8 to 10 peeled potatoes (more or less as needed)
- Schmaltz or olive oil
- Chives
- Kosher salt to taste
Directions
Fill large pot with cold water
Add peeled potatoes
Bring water to boil, cooking potatoes until soft.
Drain water
Add schmaltz or olive oil and whip together vigorously with wooden spoon until desired consistency,
We like ours just a little bit lumpy.
Add salt to taste, less is needed when using schmaltz
Snip chives and mix in
Serve
