Slow Cooker Vegetable Seitan Stew
This fantastic vegetarian stew is so easy to prepare. Using the slow cook, you will have dinner ready right when you get home. Pair it up with some rice, mashed potatoes or egg noodles and you are ready to go.

Servings
Ingredients
- 1 Onion diced
- 6 cloves Garlic chopped
- 10 small Red Potatoes washed & quartered
- 3 Carrots cut up
- 10 mushrooms quartered
- 1 pound seitan cubed
- 1 can diced tomatoes
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 3 bay leaves
- 2 teaspoons paprika
- 2 teaspoons salt
- 3 teaspoons ground pepper
- 1 cup dry red wine
- 1 tablespoon olive oil
- 2 teaspoons Worcestershire sauce (vegan)
- 1 cup vegetable broth
- 2 tablespoons corn starch mixed with 2 tbsp. water
- 1 cup frozen peas
Directions
Place all of the ingredients in the slow cooker except for the peas. Stir everything
together.
Cook on low for 8-10 hours.
Right before serving, stir in the frozen peas.
Serve with egg noodles, rice or mashed potatoes. Enjoy!

I would love to try this recipe, but it is incomplete. the first ingredient says “1 diced” but what? the third & fourth ingredient are also left out. and what exactly is “seitan”

Seitan is a fake meat made from wheat gluten. You can make it at home or find it in stores.
This really looks very tasty!
