Shuk-shooka (eggs poched in tomatoes)

this is a classic israeli dish, whether for breakfast or dinner or even an anytime your hungry snack. you can make it super spicy or not at all spicy just subsitute the sweet paprika for spicy and add a hot chili pepper.

  • Prep Time : 10 min
  • Cook Time : 5 min
  • Ready Time : 15 min

3 Servings

  • 6 plum tomatoes
  • 4 cloves garlic
  • 2 tablespoons paprika spicy or sweet for your tastes
  • 1 spicy chili pepper optional

in a frying pan on med heat chopped tomatoes garlic (and optional pepper) stir in paprika, add let cook covered for 10 minutes until there is a tomatoe sauce. then crack open eggs (i put 6/7 in a frying pan leaving room so they do not touch) cover and let simmer on low for about 3-5 min or until all of the white is cooked, and depending on your taste how hard the yellow of teh egg is (i enjoy it runnier, but if you like it hard cook a few extra minutes)
serve with bread, enjoy!
