Sauteed Spicy Sausage and Mushrooms
I used a spicy sausage for this recipe and the spice infused the whole dish, if you can't find that, feel free to use any kind of sausage and just add a little spice using hot sauce. The green in the picture are chopped garlic scapes, but you can use regular garlic in the recipe and maybe add green onion or chopped parsley for color.

Ingredients
- 1 teaspoon oil
- 1 onion, sliced
- 1 pound sausage in casing
- 10 ounce mushrooms, cleaned and sliced
- 2 garlic scapes or cloves garlic, chopped
- 1 tablespoon ketchup
- salt and pepper to taste
Directions
Bring a large pan over high heat. Add oil and onion, saute a few minutes. Cut sausage links into 4 even pieces about 2 inches long. Add to pan and let brown, stirring with a spoon as needed, not too often you want it to brown. After about 8 minutes add mushrooms and garlic and saute until mushrooms begin to brown. Then add salt and pepper to taste and ketchup, just a little bit brings the whole thing together.
Serve with rice or potatoes or on a bun.

Oh gosh this looks SO wonderful. I love sausage and usually make it with onions but adding mushrooms is next. YUM
