Rice with Corn
this is a friday night standard at my house, the kids love it.

- Cook Time : 20 min min
- Ready Time : 25 min
Servings
Ingredients
- 2 cups persian rice any med grain white rice will do
- 1 can corn kernels or 1.5 c frozen corn kernels
- 2 tablespoons canola oil
- 3.5 cups boiling water
Directions
in a small lidded pot, heat oil, and also boil water. add rice to the pot with oil, stir and let cook a few min while stirring so all of the rice gets a distinct white color. add salt to taste (i put 1 tsp) and drained corn. stir and add 3.5 c boiling water, cover and let simmer on low for 20 min. enjoy!
