Rice Noodle Chicken Bowl

Easy chef made recipe for a rice noodle bowl with ground chicken and corn. The flavors are perfect for Summer but can be made anytime of year with frozen corn too.


  • Prep Time : 20 min
  • Cook Time : 10 min
  • Ready Time : 30 min




  • Half package wide rice noodles
  • 2 tablespoons oil
  • 2 shallots, chopped
  • 2 cloves of garlic, chopped
  • 1 tablespoon chopped fresh ginger root
  • 1 stalk lemongrass, chopped
  • 1 red chili pepper, chopped
  • 10 oz. (300 grams) ground chicken
  • 1 cup fresh or frozen corn kernels
  • 2 tablespoons brown sugar
  • 2 tablespoons fish sauce*
  • 3 tablespoons lime juice
  • 1/2 cup coarsely chopped cilantro
  • 1/2 cup coarsely chopped mint
  • 2 green onions, chopped


Soak the noodles in boiling water for some twenty minutes, until they soften enough.

Put the oil in a wok and when very hot, fry the onions, garlic, ginger, lemon grass and chili for two minutes. Add the ground chicken and fry for about three minutes. Add the corn kernels and cook another minute.

Into  the Wok, add the sugar, fish sauce and lime juice. Stir and cook two minutes more.

Turn off the heat, add the greens and stir.

Drain the noodles, divide them between the bowls, top with chicken mixture and serve.

* Make your own vegan fish sauce or sub with soy sauce.

    Kosher fish sauce or not, why would kosher cooks be mixing fish and meat?
