Renaissance Turkey Legs

Since there is no kosher booth at the Renaissance festival, I made my own. This recipe is sans smoker, but it would be even better smoked.

  • 4 turkey legs, medium size
  • 3 tablespoons barbecue sauce or Orange Marmalade
  • 1/2 cup white vinegar
  • 3 cups Water
  • 2 tablespoons poultry spice blend


1 Pat turkey legs dry with a paper towel. Mix barbecue chicken spice blend, 1/2 cup vinegar and 3 cups water in a pan and marinate legs for 6 hours, turning once.
2 Drain off 1/2 liquid. Cover pan with foil and bake for 40 minutes at 350. Turn legs over after 20 minutes.
3 Heat grill and transfer turkey to give it a roasted color, then brush on the BBQ sauce or Marmalade. Cook for 10 minutes more and then serve.

  1. i worked at the NYS faire for years and would eye jealously the legs everyone else ate and now i can make my own!

    • How did you work there? Doing what? I’d like to work there selling the turkey legs!
