Pumpkin Bran Flakes Muffins
This is a healthy and delicious alternative to the traditional pumpkin muffin. It is low in sugar and oil, yet sweet and moist enough and it's made with egg whites and bran flakes. Serve these as a healthy Thanksgiving dessert alternative. Bran never tasted so good.

Ingredients
- 1 1/2 cups all purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves optional for clove lovers
- 2 cups any bran flake cereal
- 1 cup solid pack pumpkin
- 1/3 cup water (that's what I use) milk for dairy or soymilk
- 2 egg whites
- 1/4 cup vegetable oil
- 1/2 cup raisins
Directions
Stir together flour, sugar, baking powder and spices and set aside. In a large mixing bowl, combine bran flakes, water and pumpkin and let stand for 2 minutes or until cereal softens. Add egg whites and oil. Beat well. Add raisins and stir well Mix in flour mixture stirring until just combined; the batter will be stiff. Portion batter evenly into twelve muffin cups coated with cooking spray. Bake at 400 degrees Fahrenheit until lightly browned. Best served warm for dessert.
