Pizza Pot Pie

If you love pizza, this dish is for you! Served in an untraditional way, and filled with a unique blend of vegetables, both adults and kids will be excited for dinner. Feel free to substitute your favorite vegetables for the ones in the recipe.

Ingredients

  • 3 cups tomato sauce
  • 1 cup green olives , sliced
  • 1 cup sun dried tomatoes, chopped
  • 2 cups broccoli cut into small, bite-sized pieces
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 pounds pizza dough
  • 1/3 cup olive oil
  • 6 tablespoons grated Parmesan

Directions

Preheat oven to 400 degrees

In a large bowl, combine the tomato sauce, olives, sun dried tomatoes, broccoli, mozzarella, salt and pepper. Stir to combine.

Divide the mixture evenly between the ramekins. Roll out the pizza dough and cut circles slightly larger than the ramekin size. Place circles over filled ramekins and press down to seal, pulling dough over the edges. Brush tops of pizza dough with olive oil and sprinkle with Parmesan. Cut a small slit in the top of each pizza dough and bake until golden brown, about 25 minutes.
