Pistachio Crusted Mahi Mahi
A fun, easy and quick way to enjoy Mahi Mahi.

Ingredients
- 1.5 pounds Mahi Mahi
- 1/2 cup pistachios (shelled)
- 1/2 cup bread crumbs
- 1 tablespoon olive oil
- salt to taste
Directions
Preheat oven to 400 degrees F. Take the skin off the fish if you can, this step is optional.
Chop pistachios with a chopper or coffee grinder and place in a small plate with bread crumbs.
Brush olive oil on fish or place on a plate and dip top of fish in oil. Then dip in crumbs and place on baking sheet. Sprinkle with salt if desired.
Bake for about 20 minutes or until desired.

I often give a pistachio crust to fish. Simple, and gives so much flavor and extra texture. Love it.
What is the salsa-like topping on the fish?
It is just a mango salsa, with jalapeno, cilnatro and red onion.
I will try this. I eat fish at least once a day, and am looking for new recipes!
