Piedmont Peppers

I had this at a dinner party and it is not my "go to" when I have to bring something..easy to make and very impressive,,

Ingredients

  • 4 red peppers
  • Salt and pepper
  • 4 cloves garlic peeled
  • 8 ripe tomatos peeled and skinned
  • 4 fl oz olive oil
  • 16 white anchovies drained

Preparation

Preparation

1 Preheat oven to 425
2 Split the peppers in half lengthwise remove core and seeds
3 season inside with salt and pepper
4 slice each garlic clove thinly and distribute in peppers
5 place a tomato inside each pepper drizzel olive oil
6 roast in oven for 30 minutes at 425
7 lower oven temp to 35-0 and cook another 45 minutes
8 remove peppers from oven and cool
9 place two anchovies in pepper and serve on butter lettuce
10 drizzle olive oil from pan on top
