Pickled Herring Bruschetta
This yummy new appetizer is a blend of fresh tomatoes, garlic, pickled herring and basil served with grilled Italian bread.

Ingredients
- 1 cup Roma tomatoes, peeled, seeded, diced
- 6 each Garlic cloves, roasted, minced
- 1-8 oz jar Vita Pickled herring, chopped
- 2 Tbsp Basil, fresh, chopped
- To taste Salt and pepper
- 8 each Sourdough bread, ½” slices
- 1 Tbsp + 2 oz Extra virgin olive oil
Directions
Preparation
1 Combine roma tomatoes, garlic, herring, basil, and extra virgin olive oil. Season to taste with salt and pepper.
2 Brush the remaining olive oil on the sliced bread and grill them before serving with chilled bruschetta mixture.

Is this pickled herring in sour cream or the other – I forget what the other one is – Thanks
Pickled Herring is usually in vinegar or wine, it can be in sour cream, but this recipe does not cal for that.
