Peach Chicken

This is Rachel Rays Recipe I have jsut adapted it some to make it easier to make ahead of time also tastier :)
I served this with brown rice to sop up hte peach sauce. It is Yumo!!

Ingredients

  • 1/4 cup flour
  • 2 Tablespoons margarine
  • peaches pitted sliced thickly or halved
  • 1/2 lemon juiced
  • 1 1/2 tablespoons Extra-virgin olive oil
  • 4 pieces boneless, skinless chicken thighs
  • 2 pieces boneless, skinless chicken breast
  • Salt and freshly ground black pepper
  • 1 shallot, chopped , I used white onion finely chopped

  • 3/4 cup chicken stock
  • 2/3 cup peach preserves
  • 2 teaspoons hot sauce
  • 2 tablespoons Worcestershire sauce

1 In a bag place the flour and a pinch of ginger and salt and pepper. Add the chicken and coat
2 Melt Margarine in a saucepan then add the peached and lemon juice, cook until golden and soft to the touch about ten mimutes
3 in a seperate sauce pan pan fry the flour coated chicken, par fry the chicken about 8 minutes.
4 Remove the chicken and put in an oven safe pan. Put in the oven at 350 for 20 minutes to finish cooking right before serving.
5 In the mean time use the pan that you fried the chicken in and
6 add the olive oil and saute the shallots or onion then add the ginger
7 Add the peach preserves, worcestershire sauce and hot sauce.
8 Cook on medium till thickens a little about ten minutes heat up the peaches at the sime time either by the oven or on stove
9 Place the peaches around the chicken and thenpour the sauce over it.
