Peach and Blueberry Cobbler
You can use any variety of fruit that is in season.

Servings
Ingredients
- 6 peaches, peeled and sliced
- 3/4 cup blueberries
- 1/2 cup Sugar
- 1/2 lemon, juiced
- 2 cups Flour
- 1 tbsp. baking powder
- pinch salt
- 1/3 cup margarine, cold
- 1 egg
- 1/3 cup soymilk or almond milk
Directions
Preparation
1 Preheat oven to 350°F.
2 Combine fruit, sugar and lemon in bowl, pour into baking dish.
3 Combine flour, baking powder and salt. Cut in the margarine until crumbly.
4 Add 1 egg and milk, stir to combine. Spoon batter to cover fruit. Place in oven and cook until browned, about 1 hour.
5 Server with ice cream, whipped cream or nothing.
