Peach and Blueberry Cobbler

You can use any variety of fruit that is in season.

Ingredients

  • 6 peaches, peeled and sliced
  • 3/4 cup blueberries
  • 1/2 cup Sugar
  • 1/2 lemon, juiced
  • 2 cups Flour
  • 1 tbsp. baking powder
  • pinch salt
  • 1/3 cup margarine, cold
  • 1 egg
  • 1/3 cup soymilk or almond milk

Preparation

1 Preheat oven to 350°F.
2 Combine fruit, all but 2 tablespoons sugar and lemon in bowl, pour into baking dish.
3 Combine flour, baking powder, 2 tablespoons sugar and salt. Cut in the margarine until crumbly.
4 Add 1 egg and milk, stir to combine. Spoon batter to cover fruit. Place in oven and cook until browned, about 1 hour.
5 Server with ice cream, whipped cream or nothing.
