My son Akiva only eats fruit if I make it into a crisp, so I do. He loves this apple crisp so much I can serve it for breakfast or dessert and he could eat it all day long. Sure it has a fair amount of sugar, but he gets the fruit and the nuts and everyone is happy. For an extra nutrition boost you can even try leaving on the skin. I threw in some crumbled Passover graham crackers just cause I had them and no one liked them, but it would work with out them.

- 4 apples, any variety, peeled and sliced
- 1 tablespoon cinnamon
- 1/3 cup brown sugar
- 1/4 cup ground pecans
- 1/2 cup chopped walnuts
- 2 kosher for Passover graham crackers crumbled
- 2 tablespoon grapeseed oil (or coconut oil)
Preheat oven to 375.
Place sliced apples in a 8x8 square baking dish, sprinkle with half of cinnamon and place in oven for about 10 minutes while preparing topping.
For the topping, mix the other half of the cinnamon with the brown sugar, the ground and chopped nuts and the crushed graham crackers. Add the oil and mix with your hands.
Remove apples from oven and sprinkle topping to cover the whole pan. Place back in oven for about 30 minutes until browned and crispy on top.
Serve with vanilla ice cream or whipped cream if desired.
