I belong to a CSF (Community Supported Fishery) here in NYC (run by the Village Fishmonger) and I have received rainbow trout as part of the Kosher share the past several weeks. I've tried a number of recipes for it and simply pan-frying it has easily been the tastiest and easiest option.

- 4 fillets
- 1 lemon zested and juiced
- 1/4 teaspoon thyme
- salt and pepper to taste
Place fillets flesh side down in lemon juice for 5 minutes. Flip fillet and sprinkle flesh side with lemon zest, salt, pepper and thyme.
Spray grill pan with olive oil mister or PAM and grill flesh side down on medium for five minutes, flip fillet and fry for an additional five minutes until the fillet is no longer pink on the inside.
Serve with roasted potatoes or rice with vegetables.
