Oven Roasted Tomato, Basil and Roasted Pepper Salad
This is a great way to use not so fresh grape tomatoes, the ones that are wrinkly, I can't bear to throw them away.

Ingredients
- 1 pint grape tomatoes
- 1 Tbsp. olive oil
- 1/2 tsp. coarse salt
- 1/4 tsp. fresh ground pepper
- 1 8 oz. jar roasted yellow peppers
- 1/2 cup fresh basil, finely chopped
- 1/4 cup finely chopped red onion
Directions
Preparation
1 Preheat oven to 300°F.
2 Cut grape tomatoes in half. Place on baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and roast for about 20 minutes.
3 Chop the yellow tomatoes and put in bowl. Add basil and red onion.
4 When tomatoes are done add them to bowl and toss. Taste to adjust seasoning.
