No-Eggplant Babaganoush
This is such a nice dip, even your kids will eat it!

Servings
Ingredients
- 2 tablespoons Olive Oil
- 3 medium Onions (I like 2 red, 1 white or yellow)
- 3 piece Garlic cloves
- 1 tablespoon Salt
- 1 teaspoon Pepper
- 1 can Canned Sweet Green Peas Drained
- 1 tablespoon Lemon or Lime Juice Your choice
- 1 whole Hard Boiled Egg
Directions
Cut onions into large chunks and saute onions in oil.
Add crushed garlic cloves.
Add salt and pepper.
Pour drained green peas into the food processor. Save the liquid.
Once onions are caramelized, add to food processor.
Add lemon or lime juice.
Process until desired thickness, adding liquid from the canned peas for smoother texture.
Once desired texture is there, this is ready to eat.
Optional: add chopped egg
Serve with crackers.
