No-Cook Keylime Pie
This recipe is parve, vegan, gluten free, raw, and can be used for passover. It's also very healthy and delicious! Let coconut oil stand in a warm place or use a double boiler to melt.

Ingredients
- 1 1/2 cups macadamia nuts or cashews
- 1/2 cup shredded coconut
- 2 cups pitted dates
- pinch salt
- 4 huge Hass avocados
- juice of 11 big limes
- 3/4 cup agave nectar or honey
- 1/2 cup virgin coconut oil, melted
Directions
Preparation
1 To make a crust, put first 4 ingredients in the food processor.
2 Process the mixture until it is well combined, a little bit chunky, and sticky.
3 When it is done, press the crust mixture evenly into a 9 inch pie pan.
5 For the filling blend or use the food processor, combine the avocadoes, limes, agave nectar, and coconut oil.
6 Blend until smooth (this may take up to 5 minutes in a food processor) and pour the filling over the crust.
7 Smooth the top.
8 Press plastic wrap directly onto the surface of the pie and place it in the refrigerator for at least one hour and up to one day before serving.
