Mushroom Fried Rice

I love to make this with leftover brown rice that has been sitting in the fridge.


  • Prep Time : 5 min
  • Cook Time : 10 min
  • Ready Time : 15 min




  • 2 tablespoons vegetable oil
  • 1 onion, chopped finely
  • 1 Clove garlic, minced
  • 1 package mushrooms of choice, sliced
  • 1/2 package tofu, cut into small cubes
  • 1 cup leftover cooked brown rice
  • 1 tablspoon soy sauce
  • 1 Egg, beaten
  • 1/2 cup snow peas halved
  • 2 scallions, chopped


1 Heat oil in a large pan or wok over medium high heat.
2 Add onion, saute until it begins to brown then add garlic and mushrooms. Saute for a few minutes. Add soy sauce.
3 Add tofu and cook until browned, move all over to one side of the pan. Add more oil if necessary and then add rice, cook for a few minutes, then add egg and cook while mixing the rest of the ingredients in. Add snow peas and cook for 1 minute more. Garnish with scallions.
4 Sometimes I like to add a drop of garlic-chile paste for added flavor.

    Thank you for the veggie recipes. My husband thinks you have to eat meat every day, but I will try your lovely veggie recipes.
    Maybe I will change his mind.
